Tahitian vanilla has a earthly, fruity and floral fragnance and contains less natural vanillin than the bourbon variety. Tahitian beans are fatter and moister, are a deep brown color and oily to the touch. They are often also described as smelling like licorice, cherry, prunes, or wine. They have such depth and complexity that many high-end pastry chefs prefer to use this bean.

My local grocer charges almost as much for one bean as I paid for these 7 vanilla beans, so I was a bit wary about freshness and quality. Misplaced worries - these are excellent smelling, excellent tasting vanilla beans.

If you are on the fence about paying so much for a spice, try it. I started making homemade vanilla syrup because the store-bought stuff tastes so chemical-y and gross. I thought I didn't like vanilla - turns out I don't like the chemicals food companies put in vanilla stuff. I made peach melba with real vanilla on a lark and made some natural vanilla syrup with the rest. Wow. What a difference fresh homemade vanilla syrup makes in ice cream, whipped cream, coffees and desserts! Yes, you can save money by making homemade desserts (a frugal shopper can buy an ice cream maker for the price of a single night taking the family to Baskin Robbins), but I do it for the flavor. It's nice, too, that I'm reducing the preservatives in our diet.

Bottom line: Great vanilla beans at a great price.
