Editorial Reviews:

Product Description
Cinnamon leaf oil is an essential ingredient for making apple butter. It is also used in candy making and to make cinnamon candied apples. Used in chocolate icings, ice cream and baking, the intense cinnamon flavor adds a delicious flavor twist. This highly specialized culinary item is difficult to find.

5 out of 5 stars Ancient Curative   July 17, 2010

I had purchased Cinnamon oil in Seattle finding it at Pikes Place Market but had been unable to locate a source in Houston (Saddle and gun oil only). The oil is advertised to be pure and if the product is any measure relative to taste and consistency I would say cudos to the supplier. A drop in my morning coffee makes it a bit more palatable.

5 out of 5 stars Great cinnamon oil   June 8, 2010

This stuff is great. It might be more expensive than the "cinnamon flavor" or "cinnamon extract" you get in the grocery store, but it is so much more concentrated that it works out to be cheaper in the long run. I made cinnamon hard candy. To 2 cups sugar and 1/2 cup corn syrup I used 1 teaspoon (see update below) cinnamon oil. That made a strong cinnamon flavor without being really hot. Yum.

Update: The first time I made this I added the cinnamon oil when the candy was still 290F. I got a cloud of cinnamon steam in my face and perfectly flavored candy. I just tried it again but I let the candy cool slightly before adding the cinnamon. I got less steam (but still a lot) and candy that was WAY too spicy. I assume that the first time a bunch of the cinnamon oil evaporated, so the amount you need depends on the temperature of the candy when you add it. Next time I am going to add 1/4 or 1/2 teaspoon to the slightly cooled candy.

A little goes a long way, I use it to flavor apple juice and 1 tsp. will work for 3 gallons of juice.

5 out of 5 stars Delicious and Hot!   April 3, 2010

Cinnamon oil is fantastic, nice and spicy and hot, hot, hot! I enjoy making cinnamon toothpicks and this is the best oil to do so.
