This blend is phenomenal for many different recipes. I rarely use recipes, but I do enjoy creating my own. I've used Spice Hunter's Key Lime Pepper Blend to dust scallops before pan-searing. When finished, I drizzled on an orange liquer reduction just before serving with steamed rice.

Another twist on traditional American comfort food: add this blend to your standard macaroni-hamburger hotdish. Toss a few shakes onto the ground beef after browning, then (my secret ingredient) add ketchup, not tomato sauce or canned tomato soup, and a little water, cooked pasta shapes of your choice, some corn, chopped onions or whatever you want, and voila!! Instant comfort food with a Jamaican twist!!

As a side note, I tried the ketchup once because I was out of tomato sauce, and it is much richer and more flavorful that way. O, happy accident!!

Try this blend on any grilled or seared seafood - swordfish, mahi mahi, salmon, or my personal favorite, Chilean sea bass. It really packs a great flavor and a touch of heat, too, so be careful.
