| Chunky Veggie Pumpkin Chili Our friend canned pumpkin is at it again, adding fun, fiber, and flavor to this incredible chili. The taste is mellow but can easily be spiced up with extra cayenne or some hot sauce.
Ingredients (Makes 11 Servings) One 28-ounce can crushed tomatoes One 15-ounce can pure pumpkin 2 teaspoons chopped garlic ½ tablespoon cayenne pepper, or more to taste 1 teaspoon chili powder 1 teaspoon pumpkin pie spice ¼ teaspoon salt, or more to taste ½ teaspoon ground cumin | One 14.5-ounce can diced tomatoes One 15-ounce can chili beans (pinto beans in chili sauce), not drained One 15-ounce can black beans, drained and rinsed ½ cup canned diced green chiles 2 cups chopped portabella mushrooms 1½ cups chopped zucchini 1½ cups chopped onion | Directions Add crushed tomatoes, pumpkin, garlic, and all the seasonings to the crock pot. Mix well.
Add diced tomatoes, both types of beans, diced green chiles, and all the veggies. Stir thoroughly. Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours. | |

Ingredients (Makes 6 Servings)
1 cup plus 2 tablespoons fat-free ricotta cheese 2/3 cup Cool Whip Free, thawed 2½ tablespoons Splenda No Calorie Sweetener (granulated) 1 tablespoon sugar-free fat-free vanilla instant pudding mix 1 tablespoon powdered sugar 2 tablespoons mini semi-sweet chocolate chips, divided 6 sugar cones (like the kind by Keebler)
Directions Place all ingredients except chocolate chips and sugar cones in a medium bowl. Using a handheld electric mixer set to high speed, mix until fully combined and fluffy. Fold in half of the chocolate chips.
Transfer mixture to a large plastic bag, squeezing it down toward one bottom corner of the bag. Snip that corner off with scissors, so that you have a makeshift piping bag.

I always sit down & look through recipe books before buying them, and it's saved me from wasting money on books not worth half their recipes. This is one of those books, I would feel guilty buying/making/eating a lot of these recipes. Total disappointment, I'd love low cal & easy recipes, but I want them to be healthy too.
I guess if you feel guilty because of the number of calories you eat than this book is full of guilt-free recipes. But if you feel guilty poisoning your body with chemicals & an unhealthy balance of electrolytes (too little potassium & too high of sodium) than DO NOT BUY THIS BOOK.
awesome recipes July 19, 2010 smalls I am very glad I purchased this cookbook. Not only does it have some very good recipes they are also low calorie, and most usually things you have in pantry.

Really Smart! July 9, 2010 Jen By using just a few simple substitutions and adjusted cooking methods you can stay satisfied without sacrificing taste! Genius! I am incorporating the recipes into my weight watchers plan and staying full and not feeling like I am depriving myself. Love these books!

When I first went to college, I lived in the dorms and had the luxury of having the dining hall downstairs from me. Nowadays, I live off campus and have to fend for myself. With a packed schedule, little patience, and not the best culinary skills in the world- Hungry Girl has made yummy cooking possible for me!
I do get all the complaints about her using low-fat/fat-free/non-healthy foods. The thing to do is just use her cookbooks as a supplement to an already balanced diet. If you are more into the healthy and organic eating, these books probably aren't going to be on your bookshelf. If you are looking for lower calorie, easy versions of your favorite meals- buy this book! I am the type of person who just can't limit her to the smallest sliver of delicious organic cake- I need a big heapin' slice. This is where Hungry Girl helps me the most. I can have my big heapin' slice and not have the guilt of it on my mind. If the recipes turn out to be too bland for you, just take a little bit of initiative and throw in more spices!
Her books help me pre-cook meals and pre-prepare dinners/lunches/breakfasts. Without her easy recipes I would be eating cereal and energy bars all the time- so these books give me fun, different options. I do have a tendency to add more fruit/veggies to the recipes to make them more hearty.
Another thing I really, really like about her books is that she uses a LOT of vegetarian meats (like BOCA and Morningstar). I'm a vegetarian and this has helped me a lot with creating new recipes and using hers. Even if the recipe in not vegetarian, they are very easily converted (with a mere replacement of turkey bacon with veggie bacon). All in all? I'm a fan! Since I've gotten these cookbooks I'm guaranteed at least one big, home-cooked meal a day. And, of course, a guilt-free delicious dessert! No more Ramen and Spaghetti-Os for me!
